How can I get my notes to fade out?

You can't fade out the songs.

You can set the individual Volume for each note, if that's what you mean.
You should be able to see something like this;
ppp pp p mp mf f ff fff

Something along those lines.
ppp = quietest
fff = loudest
just select the note you want to lower/raise and then click the apropriate volume
